Herne-juustopasta / Cheese pasta with peas

Juustopastaa. Taas.
En voi sille mitään, rakastan pastaa ja juustoa yhdessä. Ja herneitä. 
Olisiko nyt jo aika kertoa, että tämä ohje on Nopea, Helppo ja Herrrkullinen? Jos käytät pakasteherneitä, on työ vielä entistä nopeampaa. Tämä on yksi niistä ohjeista, kun on hirveä nälkä, eikä jaksa tehdä MITÄÄN erikoista. Kaikilla on sellaisia päiviä, eikö niin?
Olin istunut kuunnellen musiikkia koko päivän, kun yhtäkkiä, kas kummaa, nälkä iski. Äkkiä tietokoneelta nopea ohje ja HAA, pastaa. Olkaa hyvät muut perheenjäsenet, pasta olkoon kanssanne ainiaan. Senkin jälkeen, kun muutan kotoa. *Ilkeää naurua*

LILACS. From our back yard. Yes, FINALLY. I've seen these for like a MONTH (not really) in everyone else's back yards but NONE of my own. I was biking again and rode past like a thousand of these little cuties. Couldn't resist, and took a few with me home. SORRY NEIGHBORS. But aren't they beautiful?? 
And guess what? I made the mistake to take them inside. I did, I put them in a jar without any water. I killed these beauties like a murderer. Sigh.
But let's talk about my food again.
I thought it was hard getting kids to eat greens. But it's even harder getting my DAD or BROTHER to eat them. You can't even imagine. Don't be mad Kalle, I love you!
But are peas an exception? No. They weren't. I really thought I'd make a food EVERYONE in our family would LIKE to eat, but nah.
Thank you mom for always eating my food with me. And thank you dad for always finishing my cakes. Thank you sis for letting me eat my own foods and not touching them at all. And thank you bro, for.. For TRYING to eat what I make. Cause I do it with love. Even though there's flying spoons and bowls, a beeping oven (and sometimes even the fire alarm), messy dishes and a SCREAMING me, but I still do everything with love. I promise.
And let's say, this was heavenly.
Herne-juustopasta (neljälle):
1 kuppi herneitä (noin yksi pakastepussillinen)
2 kuppia kuivaa pastaa 
1/4 kuppia pastan keitinvettä
1/2 rkl voita
3/4 kuppia ricotta-juustoa
2-3 valkosipulinkynttä
1 tl oliiviöljyä
1/3 kuppia vastaraastettua parmesaania
1/3 kuppia vastaraastettua mozarellaa
nippu basilikaa
mozarellaa

Laita uuni lämpenemään 225 asteeseen.
Keitä pasta pakkauksen ohjeen mukaan ja valuta, mutta säästä keitinvesi.
Keitä tuoreet herneet, ja sekoita pastan sekä voin kanssa. (Pakasteherneitä ei tarvitse keittää, voit kaataa ne sulaneina pastan sekaan.)
Sekoita tehosekoittimessa ricotta, valkosipuli ja oliiviöljy, kunnes seos on sileää. Mausta suolalla ja pippurilla. Lisää juustot ja basilika.
Kaada seos pastan kanssa uunivuokaan, ja sekoita. Lisää pastan keitinvesi sekaan. Revi päälle tuoretta mozarellaa ja paista noin 5 minuuttia, kunnes juusto on sulanut.

Cheese pasta with peas (serves four):
1 cup peas, frozen or not
2 cups dry pasta
1/4 reserved pasta water
1/2 tbsp butter
3/4 cup ricotta cheese
2-3 cloves garlic
1 tsp olive oil
1/3 cup parmesan cheese, freshly grated
1/3 cup mozzarella cheese, freshly grated
a bunch basil, chopped
mozzarella

Preheat oven to 225C/400F.
Cook pasta and peas. Toss them together with butter.
In a food processor, blend the ricotta, garlic and olive oil until smooth. Season with salt and pepper. Add the cheeses and basil.
Pour the pasta and the cheese mixture into a tin. Toss them with a bit of the reserved pasta water. Add a few slices of fresh mozzarella on top.
Broil for 5 minutes until cheese has melted.

Fariinikakku / Brown sugar cake

Miksi, oi miksi rumien kakkujen kanssa saa aina hienoimmat kuvat, mutta hienojen kakkujen kanssa se on mahdotonta? Olenko ainoa tämän ongelman kanssa? 
Eilen tuli aivan kamala himo maustekakkuihin, joista en yleensä edes pidä. Passitin äidin kauppaan ostamaan fariinisokeria ja tässä tulos. Kinuskikissan helpot suosikit - kirjasta löytyi helppo ohje ja eikun kokeilemaan. No, ensinnäkin ohjeessa käskettiin käyttämään 20-senttistä vuokaa, paistaa 50 minuuttia ja jäähdyttää kakku kokonaan. Muita noudatin, paitsi jäähdyttämistä. Vuoka oli liian pieni, joten kakku nousi vuoan yli. Paistoin 50 minuuttia, ja veitsi tuli puhtaana kakun sisältä ulos, mutta kun kumosin kakun, oli se keskeltä aivan raaka ja sen takia lässähti. Siirtelin kakkua, kun se oli vielä lämmintä, joten kakku meni rikki. Kuorrutteessakaan en jaksanut odotella kinuskin jäähtymistä joten siitä tuli kokkareinen ja liian paksu. Noudattakaa ohjetta, kiitos.

Why, oh why do I always take the best pics of UGLY cakes? Do I really get inspiration out of ugly stuff? Nah, don't think so.
But yeah, this whole cake was a disaster. The tin was too small, the cake was raw and the icing had lumps and was way too thick. Yup, I did it. And I'm putting it on my blog. I thought I'm a perfectionist and I'm telling you about something that I'm not happy about. Progress.
So I told my mom yesterday to go to the shop nearby to buy brown sugar. She did, because I hadn't baked in three WHOLE days. 
She told me she was going to have a cup of coffee with something sweet, but we had NOTHING. She said she had looked through all of our cupboards, fridge plus the freezer. (I'm happy she didn't find my candy (not that she'd have taken any.) But she was upset when I came home. And an upset mom is no good at all. So I had to bake for her. You're welcome Mom!
And again, I know it's ugly, but trust me, it tastes divine.
Fariinikakku:
225 g voita
2 1/2 dl fariinisokeria
3 munaa
5 dl vehnäjauhoja
2 tl ruokasoodaa
1 rkl vaniljasokeria
1 rkl kanelia
1 1/2 rkl kaardemummaa
1 1/2 tl inkivääriä tai piparkakkumaustetta
3 dl piimää

Kuorrute:
1 1/2 dl fariinisokeria
1 1/2 dl kuohukermaa
100 g tummaa suklaata

Kakku:
Vatkaa voi ja fariinisokeri vaahdoksi.
Sekoita joukkoon munat yksitellen.
Sekoita kuivat aineet keskenään ja lisää ne taikinaan vuorotellen piimän kanssa.
Kaada taikina voideltuun ja korppujauhotettuun kakkuvuokaan (ohjeessa 20cm, mutta suosittelen isompaa)
Paista 175 asteessa noin 50 minuuttia. Anna kakun jäähtyä ennen kumoamista.

Kuorrute:
Mittaa kattilaan fariinisokeri ja kerma. Kiehauta ja jatka keittämistä noin 5 minuuttia.
Ota kattila liedeltä ja jäähdytä hetken aikaa. Lisää joukkoon paloiteltu suklaa ja sekoita kunnes se on sulanut. Kaada kuorrute kakun päälle.

*Kakku on parhaimmillaan seuraavana päivänä
Brown sugar cake:
225 g butter
1 cup + 1 tbsp brown sugar
3 eggs
2 tsp baking soda
1 tbsp vanilla sugar
1 tbsp cinnamon
1 1/2 tbsp cardamom
1 1/2 tsp ginger
1 1/4 cup butter milk

Frosting:
2/3 cup + 1 tbsp brown sugar
2/3 cup + 1 tbsp double cream
100 g dark chocolate

Preheat the oven to 175C/350F degrees. Grease a 20 cm (I recommend bigger) cake tin. Set aside.

Cake:
Beat together the butter and brown sugar until pale. Beat in the eggs one at a time. Mix together the dry ingredients and mix them with the dough, together with the buttermilk.
Pour the dough into the prepared tin and bake for about 50 minutes.
Let cool awhile before turning.

Frosting:
Bring the cream and sugar to a boil and let simmer for 5 minutes. Let cool for awhile and add the chopped chocolate. Pour on top of the cooled cake.

*The cake is better the next day, when it has been sitting in the fridge overnight.

Ranskalainen suklaatorttu / French chocolate cake

Isäni on suuri suklaan ystävä ja tänään on hänen syntymäpäivänsä. Tein isälle hänen lempisuklaakakkunsa ja kuvailin sitä Lidlistä kolmella eurolla ostettujen tulppaanien kanssa. Aloitin kakun tekemisen eilen, ja kuorrutin sen vasta tänään aamulla. 
Kakku on tosi simppeli, viiden raaka-aineen kakku. Se on kuitenkin herkullisen suklainen ja hieman mutakakun tyylinen. Suosittelen makeanhimoisille suklaafaneille, kuten minä ja isäni. 
Pidin eilen jo kuvaussession vain näiden tulppaanien kanssa. Hyvin yhteistyökyvyttömiä, sanon minä :D Terälehdet lentelivät pitkin terassia, ja kukat eivät taipuneet suuntaan minne tahdoin. Meinasin raivostua kukille ja heittää ne menemään, mutta ajattelin kuitenkin säästää ne tälle päivälle. Onneksi.
Kakku ei ole kaunein näkemäni, eikä siitä yrittämälläkään sellaista saa. Parhaan suklaakakun tittelin se kuitenkin saa minulta ja varmasti myös isältäni. Pari terälehteä sinne tänne, ja kakusta kuin kakusta saa tarpeeksi nätin. 
Kakkua nautitaan tänään myöhemmin kahvipöydässä, kera mustikkapiirakan ja muiden leipomusten. Kakun kanssa voisi tarjoilla myös esimerkiksi kermavaahtoa, tai vaniljajäätelöä, jos tahtoo. Lisäämällä kakkuun tai lisukkeisiin sitruunamehua, saat kakkuun sopivaa raikkautta.

It's my dad's birthday, so I asked him what he'd like to have:
'Make me the chocolate cake' ,he said.
It wasn't really a surprise, 'cause this is his all time favorite cake. No wonder. 
This cake has all of the things a great chocolate cake should have, except one. It's dead simple to do, it's moist, rich, sweet and chocolate-y. It's kind of a mud cake, without any flour. The only thing that is missing, are the looks. Well, I'll work on that. I will. Not.
Because why should I? It tastes good, okay it doesn't. It tastes heavenly and it looks OKAY with a few petals on it. So why? 
BECAUSE I'm a perfectionist, and I want it to look edible. Now it just looks like a chocolate cake, with more chocolate on top. And a few tulips trying to make it look pretty. That's it. Over now. It's not pretty, but nobody cares.
Me and my dad prefer this cake without any sides. We enjoy it plain, with a cup of coffee and good company. Neither of us won't be satisfied with only one piece of this gorgeous cake. So we take another slice. And another, until we're more than happy to stop. This cake can totally be proud of itself.
If you want to, you can use whipped cream or vanilla ice cream for sides. You can also add some lemon to the cake, if you prefer it a bit fresher. 
*Drums rolling* 'And the award of the best chocolate cake goes to..'
There's no need to even think about it, 'cause we all know it.

Woah, I'm impressed. No, not because I just gave MYSELF an award. But because nobody has taken a piece of that cake yet. Dad c'mon, I need you back from work. It's time for some cake, you know.

And now it's your turn to make this awesome five ingredient cake. Recipe below!

Ranskalainen suklaatorttu:
200 g voita
200 g tummaa suklaata
5 kananmunaa
1 1/2 dl fariinisokeria
1 1/2 dl hienoa sokeria

Kuorrutus:
200 g tummaa suklaata
2 rkl voita

Sulata paloiteltu suklaa ja voi kattilassa miedolla lämmöllä.
Erottele keltuaiset ja valkuaiset eri kulhoihin.
Vaahdota valkuaiset ja lisää vaahdottamisen lomassa sokeri ruokalusikallinen kerrallaan. Vatkaa kovaksi vaahdoksi.
Vatkaa keltuaiset ja fariinisokeri vaaleaksi vaahdoksi.
Lisää keltuaisvaahdon sekaan hieman jäähtynyt suklaa-voiseos.
Kääntele valkuaisvaahto varovasti joukkoon.
Kaada taikina voideltuun, 24 senttiseen irtopohjavuokaan.  
Paista 175 asteessa noin 40 minuuttia. 
Jäähdytä suklaatorttu huoneenlämmössä ja nosta sitten jääkaappiin vähintään kahdeksi tunniksi. 

Sulata kuorrutteen suklaa ja voi kattilassa. Levitä täysin jäähtyneelle pohjalle.

*Jos haluat kakulle korkeat reunat, älä voitele vuokaa sen reunoilta. Kakun reunat jäävät vuokaan kiinni, ja kakun lässähtäessä reunat näyttävät korkeilta. 
*Älä paista kakkua liian pitkään. Kakun keskelle laitettuun cocktailtikkuun tulee jäädä hieman tahmeaa taikinaa.
*Kakku lässähtää joko jo uunissa, tai uunista oton jälkeen.
*Älä kuorruta kakkua, jos se on lämmin. Koko kakku romahtaa ja kuorrute valuu kakun sisälle.

French chocolate cake:
200 g butter
200 g dark chocolate 
5 egg whites + 5 egg yolks
1/2 cup + 2 tbsp brown sugar
1/2 cup + 2 tbsp caster sugar

Icing:
200 g dark chocolate
2 tbsp butter

Cake:
Grease a 24 cm/9 inch cake tin and set aside.
Preheat the oven to 175C/350F.
Melt the butter and chocolate in a pan on a low heat.
Whisk the egg whites until soft peeks form. Add the caster sugar and whisk until stiff. You should be able to turn the bowl upside down without the meringue sliding out.
Beat the egg yolks and brown sugar until light brown.
Add the chocolate-butter mixture to the egg yolks. 
Add the egg whites carefully to the mixture.
Pour the batter into the prepared tin and bake for about 40 minutes.
Let cool in the room temperature and put it in the fridge for at least 2 hours.

Icing:
Melt the butter and chocolate in a pan. Pour the icing on top of the cake and decorate the way you want to.

*If you want high edges for the cake, don't grease the cake tin.
*Don't bake the cake for too long, it's gonna be dry.
*The cake will flatten. If it doesn't in the oven, it will when it's cooling down. Don't worry, it's okay.
*Don't frost the cake if it's still warm. The cake will collapse. Trust me, it's not worth the try.

Valkosipuli-yrttipasta / Garlic butter pasta with herbs


Sunnuntaina on kiva tehdä jotain helppoa ja nopeaa eikö niin? Tämä onkin loistava resepti juuri laiskoille sunnuntaipäiville. Tähän pastaan saa sujautettua mukavasti kaikki edellisen viikon ylijääneet yrtit ja mausteita saa lisättyä helposti omaan makuun sopien. Itse pidin tämän tällä kertaa hyvin yksinkertaisena, mutta maukkaana. 
Kuvaus meni tällä kertaa kamalan sateisen ja tuulisen ilman takia aivan mönkään. Kaunista kuvaa oli miltei mahdoton saada, ja ruoka jäähtyi ennen kun sain sitä syödäkseni. Hyvää se oli silti..
Tein ohjeesta puolikkaan ohjeen ja siitä riitti minulle ja äidilleni sopivasti. Reseptiin käy myös esim. spagetti, makaroni tai mikä vain mieleisesi pasta.

Yay, I finally made it! I've been craving spinach and basil for SO long. Finally.
This was literally the easiest recipe you can get. And the fastest. Lazy Sunday meal, check? Yes.
And don't you dare to tell me it has a lot of butter. That doesn't count on Sundays, right? Or weekends. Or never. 'Cause this is the best pasta you can make in 15 minutes, to be honest. I mean, seriously, look at that! Those little green bits of basil, chives and my new love; baby spinach. Look at the perfectly cooked pasta and that parmesan cheese. I bet every one of you are drooling over your computers. Or at least one of us. It's me.

Valkosipuli-yrttipasta (n. 4 annosta):
220 g pastaa
3 rkl voita
3-4 valkosipulinkynttä
1/2 nippu basilikaa
1/2 nippu babypinaattia
(ruohosipulia)
suolaa ja pippuria
parmesaania

Keitä pasta pakkauksen ohjeen mukaan.
Sulata voi ja lisää murskattu valkosipuli. Kuullota miedolla lämmöllä 3-5 minuuttia. Varo, ettet polta valkosipulia, se maistuu kitkerältä.
Lisää pinaatti, basilika ja ruohosipuli, jos käytät sitä. Sekoittele noin minuutti.
Kaada valutettu pasta pannuun ja kääntele hetki. Lisää tarpeen mukaan suolaa ja pippuria.
Koristele parmesaanilla.

Garlic butter pasta with herbs (about 4 small servings):
1/2 lb pasta
3 tbsp butter
3-4 cloves garlic, minced
1/2 bunch basil, chopped
1/2 bunch baby spinach, chopped
(chives)
salt and pepper
parmesan cheese

Cook the pasta according to package directions. 
Meanwhile, melt the butter in a medium skillet. Add the minced garlic and saute on a medium heat for 3-5 minutes. Please, don't burn the garlic, it'll taste bitter. 
Add the chopped basil, spinach and chives, if you're using them. Stir for a minute, or so.
Add the drained pasta into the pan. Stir until well coated. Season with salt and pepper if necessary. 
Serve with shredded parmesan cheese.

Sitruunakakku / Lemon cake

Vapun kunniaksi pyöräytin tämän kellertävän ja raikkaan sitruunakakun. Lemon curd onnistui vasta toisella kerralla, mutta hyvää se oli. Ensimmäisestä satsista tuli liiallisen sitruunamehun johdosta hieman liian löysää. Eli kannattaa noudattaa ohjetta, ja laittaa vain se vajaa yksi desilitra mehua :D
Pohjan voi tässä kakussa paistaa yhdessä 15-18 cm kokoisessa vuoassa, korkealla leivinpaperireunuksella vuorattuna. Pohjassa ei ole yhtään rasvaa, joten se on hyvin kuohkea ja ilmava, ja pysyy siksi kasassa, vaikka nousisikin hieman vuoan reunojen yli. 
Tämän(kin) kakun tekoon kannattaa varata muutama päivä, sillä pohjia on helpompi käsitellä, kun ne ovat seisseet jääkaapissa yön yli.
Koristelussa tuli tällä kertaa kiire, ja se näyttää kovin alkeelliselta näissä kuvissa :D Ensi kerralla panostus myös siihen. Narsisseja ei lähikaupasta löytynyt ja jouduin tyytymään vapunkeltaisiin ruusuihin. Hyvin nekin toimivat rekvisiittana. 
Porvoossa oli hyvin harmaa ja sateinen päivä, ja siksi kuvatkin ovat hieman tummia. Toivottavasti sää kirkastuisi huomiseksi..
En yleensä edes pidä sitruunan mausta ruoissa, ja jätänkin usein sitruunamehun ja -kuoren pois leivonnaisistani. Olen kuitenkin jo pitkään himoinnut jotain sitruunaista, ja sain vihdoin intoa tehdä tämän kakun. Suosittelen tätä suurille sitruunafaneille, koska kakku on TODELLA sitruunainen.

Happy first of may! I decided to make this yellow lemon cake and try the famous lemon curd for the first time today. It was a bit of a disaster when I realised my curd didn't set at all. It was all fluid and didn't cooperate with me at all. But at the end everything went fine (I made a new batch of lemon curd, and it turned out alright), and we had a great evening with my family and the cake. I just had a rush with the piping (as you can clearly see) and threw a few roses on top of the cake before I took the photos. Well, that's also a way to decorate, I guess. 
It was raining and windy at the same time, so please, I kindly ask you to appreciate my effort for the pic. It wasn't easy to take, even though it looks like it..
I usually don't even like lemon, and I often leave it out while baking. Now I've just been craving lemon for about a month, and I finally got the time and energy to do it. This cake turned out REALLY lemony and I recommend this for big lemon fans.

Sitruunakakkupohja:

3 suurta munaa
3 dl sokeria
1 dl vettä
3 dl vehnäjauhoja
2 tl leivinjauhetta
1/2 tl vaniljajauhetta tai 1/2 vaniljatanko
1/2 sitruunan raastettu kuori

Lemon curd (noin 3 dl):

1 1/2 dl sokeria
2 suurta munaa
2 sitruunan raastettu kuori ja mehu (vajaa 1 dl mehua)
50 g huoneenlämpöistä voita

Sitruunakerma:

3 dl kuohukermaa
1 dl lemon curdia
2-3 rkl sokeria

Sitruunakakkupohja:
Kuumenna uuni 175 asteeseen.
Vuoraa halkaisijaltaan noin 15-18 cm vuoka korkealla leivinpaperireunuksella, tai paista pohjia kahdessa vuoassa.
Vatkaa munia ja sokeria noin 5 minuuttia.
Kuumenna vesi ja sekoita se muna-sokerivaahtoon.
Sekoita kulhossa kuivat aineet ja lisää muiden aineiden joukkoon. Lisää sitruunan kuoriraaste ja sekoita varovasti nostelemalla tasaiseksi.
Kaada taikina vuokaan.
Paista kakkupohjaa 50-55 minuuttia, tai kahdessa vuoassa 30 minuuttia.

Lemon curd:
Laita sokeri, munat, sitruunan mehu sekä kuoriraaste kuumuutta kestävään kulhoon. Kuumenna kattilassa vettä ja nosta kulho kattilan päälle vesihauteeseen. Vatkaa koko ajan käsivatkaimella, kunnes seos sakenee. Seoksen kuuluu olla suunnilleen yhtä sakeaa kuin hollandaise-kastike.
Ota kulho vesihauteesta ja sekoita joukkoon voi. Sekoita, kunnes voi on sulanut. Kumoa tahna kannelliseen lasipurkkiin ja jäähdytä. 

Sitruunakerma:
Sekoita kerma, lemon curd ja sokeri vaahdoksi.

Kakun kokoaminen:
Leikkaa kakkupohja(t) neljäksi ohuemmaksi pohjalevyksi.
Laita ensimmäinen pohja kakkuvadille ja levitä päälle tasainen kerros lemon curdia. Toista, kunnes olet käyttänyt kolme pohjalevyä. Laita päällimmäiseksi viimeinen pohjalevy leikkauspinta alaspäin.
Levitä kerros sitruunakermaa kakun reunoille ja päälle. Pursota loput kermasta haluamallasi tavalla.

*Lemon curd säilyy jääkaapissa noin viikon
*Kakku on parhaimmillaan levättyään jääkaapissa yön yli


Lemon cake:
3 big eggs
1 1/4 cup granulated sugar
1/2 cup hot water
1 1/4 cup all-purpose flour
2 tsp baking powder
1/2 tsp vanilla powder 
1 tbsp grated lemon zest 

Lemon curd (about 1 1/4 cup)
2/3 cup granulated sugar
2 large eggs
2 tbsp grated lemon zest
1/2 cup lemon juice (two lemons)
50 g butter, room temperature

Lemon-cream-frosting:
1 1/4 cup double cream
1/2 cup lemon curd
2-3 tbsp granulated sugar

Lemon cake:
Preheat oven to 175C/350F degrees.
Grease two 15-18 cm cake tins and set aside.
Beat the eggs and sugar, until light and pale (about 5 minutes). Stir in the hot water. 
Whisk together the flour, baking powder and vanilla powder. Add into the batter with the lemon zest and stir carefully until smooth.
Pour the batter into the prepared tins and bake for 30-40 minutes until golden brown from the outside.
Let sit in the tin for 15 minutes and turn onto a wire rack to cool completely.

Lemon curd:
In a bowl, whisk together the eggs, sugar, lemon zest and juice.
Add water to a pan and bring it to simmer. Place the bowl on top of the pan and whisk constantly until the mixture thickens up. It should be almost as thick as the hollandaise-sauce.
Take the bowl off the pan and stir in the butter. Whisk until the butter is melted. 
Pour the lemon curd into a jar. You can store it in the fridge for about a week.

Lemon-cream-frosting:
Whisk together the double cream, lemon curd and sugar.

Assembling the cake:
Cut the cakes in halves so you have four layers of cake. 
Start by putting the first layer of cake onto a cake platter. Spread a thin layer of lemon curd on top. Add the second layer and repeat until you have used three cake layers. Put the last cake layer on top. 
Spread a thin layer of the lemon-cream-frosting on top and the sides of the cake. Decorate the way you want yourself with the rest of the cream-frosting.
